Clearspring Sun-Dried Daikon is to traditional, time honoured methods, by simply shredding fresh daikon and leaving it to dry on large rice mats in the sun during the clear, dry days of winter. This drying process gives the daikon an especially concentrated sweet and mellow flavour and preserves most of its nutritional value.

Called Kiriboshi Daikon in Japanese, it is an extremely healthy and versatile food which is one of the quintessential vegetables in the Japanese diet.
